Sweet Potato, Spinach, and Egg Bake

Make these and bake as a casserole, or in a muffin pan and freeze for a grab and go breakfast on busy mornings.

Ingredients:

1 sweet potato, shredded (about 1 ½ cups)

6 eggs

¼ cup milk

¼ tsp salt

½ tsp ground pepper

½ cup frozen onions, thawed

1 10 ounce package frozen spinach, thawed and drained

1 ½ cups reduced fat cheddar cheese

Directions:

1. Spray 8x8 or muffin pan with cooking spray

2. Spread shredded sweet potato on bottom

3. Whisk eggs, milk, salt and pepper together

4. Add onions, spinach, and 1 cup of cheese

5. Sprinkle remaining cheese on top

6. Bake casserole 40 minutes until cooked through in the middle. OR bake muffins 20 minutes

Makes 12 servings
